  • 1/2 cup heavy whipping cream
  • 1.5 tbsp So Nourished powdered sugar substitute

  • 3/4 cup raspberries
  • 3/4 cup pecans, toasted and ground

Instructions

  1. Whip the Cream: In a clean bowl, whip 1/2 cup of heavy whipping cream until stiff peaks form. Set aside.
  2. Prepare Cream Cheese Mixture: In another bowl, whip the softened cream cheese and So Nourished powdered sugar until well blended.
  3. Combine Ingredients: Mix the whipped cream and cream cheese together using a hand blender.
  4. Add Raspberries: Gently fold in the raspberries with a spatula. Freeze the mixture for 2 hours or until mostly firm.
  5. Roll and Freeze: Roll ping-pong ball-sized spoonfuls of the frozen mixture into the ground pecans. Freeze until solid. This recipe makes about 12 bites.
