Instructions

  1. Make the dough: Preheat oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy, about 5 to 7 minutes. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the creamed mixture, mixing thoroughly. Stir in the chopped walnuts and 1 1/4 cups of the shredded coconut until evenly incorporated.
  2. Assemble the bars: Lightly grease a 13×9-inch baking pan. Press approximately 3/4 of the dough evenly into the bottom of the pan to form the crust. Spread the raspberry preserves evenly over the crust layer. Sprinkle the white baking chips and the remaining 1 cup of shredded coconut evenly over the raspberry preserves. Crumble the remaining dough over the top and press lightly to adhere it to the filling.
  3. Bake the bars: Place the baking pan in the preheated oven and bake for 30 to 35 minutes, or until the top crust is golden brown and set. Remove from oven and allow to cool completely on a wire rack before cutting into bars.
