Cookie Dough:

  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 tsp pumpkin spice
  • 1 tsp salt
  • 3 cups all-purpose flour

Toffee Bits:

  • ½ cup toffee bits

Instructions

  1. Creaming the Butter and Sugars: In a mixer, cream together butter and the two sugars until fluffy and well incorporated.
  2. Adding Remaining Wet Ingredients: Add egg, vanilla extract, salt, and pumpkin spice. Mix until well incorporated.
  3. Incorporating Flour: Gradually add flour to the mixture, mixing well after each addition. The dough should be non-greasy; if sticky, add a little more flour.
  4. Adding Toffee Bits: Stir in the toffee bits.
  5. Rolling and Chilling: Roll the dough to 1/4 inch thickness between parchment or wax paper. Chill the dough in the fridge for at least 30 minutes.
  6. Cutting and Baking: Cut out shapes from the chilled dough and place them on a parchment paper-lined baking sheet. Bake at 375 degrees for 7-9 minutes. Cool on the baking sheet for 10 minutes.
