For the Bars:
- 10 tablespoons (140 g) unsalted butter, room temperature
- 1/2 cup dark brown sugar, packed
- 3/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla
- 1 cup pumpkin puree (do not use pumpkin pie filling)
- 1 3/4 cups semi-sweet chocolate chips, divided
- 2 cups (260 g) all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground allspice

- Preheat the oven: Preheat the oven to 350°F. Line a 9 x 13 inch baking pan with parchment paper, extending the parchment over the sides for easy removal.
- Prepare pumpkin: Spread pumpkin puree on a plate, remove excess moisture with paper towels, and set aside.
- Cream butter and sugars: Cream together butter and sugars until light and fluffy.
- Add wet ingredients: Mix in egg yolk, pumpkin, and vanilla until well combined.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- Mix the dough: Incorporate dry ingredients into wet ingredients until just combined.
- Add chocolate chips: Gently fold in 1 1/2 cups of chocolate chips.
