For the Filling:
- 1 ½ pounds plums (use 2 pounds and add ¼ cup more sugar if using a deep-dish pie plate)
- ½ cup sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon
- 1 tablespoon unsalted butter
For the Crust:
- Preheat Oven: Preheat your oven to 450°F (230°C).
- Mix Dry Ingredients: In a bowl, combine the sugar, flour, and cinnamon.
- Prepare Plums: Rinse the plums, quarter them, and remove the pits.
- Layer Filling: Place half of the plums in the bottom crust, sprinkle with half of the sugar mixture. Add remaining plums and sugar mixture. Dot with butter.
- Top and Seal: Place the second crust over the filling, crimp the edges, and cut slits for steam.
- Bake: Bake at 450°F for 12 minutes, then reduce to 325°F and bake for another 25 minutes.
