  • 1 ½ pounds plums (use 2 pounds and add ¼ cup more sugar if using a deep-dish pie plate)
  • ½ cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 tablespoon unsalted butter

For the Crust:

  • 2 unbaked pie crusts

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (230°C).
  2. Mix Dry Ingredients: In a bowl, combine the sugar, flour, and cinnamon.
  3. Prepare Plums: Rinse the plums, quarter them, and remove the pits.
  4. Layer Filling: Place half of the plums in the bottom crust, sprinkle with half of the sugar mixture. Add remaining plums and sugar mixture. Dot with butter.
  5. Top and Seal: Place the second crust over the filling, crimp the edges, and cut slits for steam.
  6. Bake: Bake at 450°F for 12 minutes, then reduce to 325°F and bake for another 25 minutes.
  7. Cool: Let the pie cool to allow the juices to thicken.
