Pizza Sauce Mixture
- 1 jar (16 oz.) pizza sauce
- 1 can (14.5 oz.) petite diced tomatoes, undrained
- 2 cups water
- ½ cup chopped pepperoni, plus extra for topping if desired
Pasta and Add-ins
- 3 cups uncooked whole wheat rotini
- 5 ounces fresh baby spinach, roughly chopped
- 1 cup shredded mozzarella cheese, plus extra for topping if desired
Garnish
- Fresh parsley or basil (optional)
- Combine Ingredients: In a large skillet with a lid, combine the pizza sauce, undrained diced tomatoes, water, and chopped pepperoni. Stir to mix everything evenly.
- Cook Pasta: Place the skillet over high heat and bring the mixture to a boil. Add the uncooked whole wheat rotini pasta, then reduce the heat to medium or medium-high to maintain a gentle boil. Cover the skillet and cook for 8-10 minutes, stirring occasionally to ensure the pasta cooks evenly and doesn’t stick.
- Add Spinach: During the last 1-2 minutes of cooking, add the roughly chopped fresh baby spinach to the skillet. Cover again and allow the spinach to wilt before stirring it into the pasta mixture.
- Add Cheese: Lower the heat to low and stir in the shredded mozzarella cheese until it melts completely, creating a creamy, cheesy sauce coating the pasta.
- Broil (Optional): If desired, sprinkle extra shredded mozzarella cheese and additional pepperoni slices on top. Transfer the skillet to the oven and broil under high heat until the cheese is bubbly and golden brown, about 2-3 minutes. Watch closely to prevent burning.
- Garnish and Serve: Remove from heat and garnish with fresh parsley or basil if desired. Serve warm and enjoy your one-pan pizza pasta!
Notes
- Use whole wheat rotini for added fiber and nutrition, but any rotini or similar pasta shape will work.
- Keep an eye on the pasta while cooking to prevent it from sticking or overcooking.
- Broiling is optional but adds a nice crispy top layer; if you don’t have an oven-safe skillet, transfer to a baking dish before broiling.
- Customize with your favorite pizza toppings, such as olives, mushrooms, or bell peppers.
