Instructions

  1. Mix the wet ingredients: In a large mixing bowl, combine the room temperature butter, butter-flavored shortening, powdered sugar, egg, and vanilla extract. Use an electric mixer to beat the mixture until smooth, creamy, and well combined.
  2. Add dry ingredients: Incorporate the all-purpose flour and salt into the butter mixture. Mix thoroughly until a dough forms and starts pulling away from the sides of the bowl.
  3. Divide and color dough: Split the dough evenly into two portions. Leave one portion plain and add several drops of pink food coloring to the other. Mix until the pink color is consistent and you achieve the desired shade.
  4. Roll out dough: On a lightly floured surface, roll each dough portion into similarly sized rectangles about ¼ inch thick.
  5. Layer the dough: Place one rectangle atop the other, aligning the edges carefully.
  6. Roll into a cylinder: Starting from one edge, tightly roll the layered dough into a cylinder shape, like a jelly roll.
  7. Coat with sprinkles: Spread the pink sprinkles on a flat surface or plate. Roll the dough cylinder in the sprinkles until all sides are thoroughly coated.
  8. Chill the dough: Wrap the sprinkled dough cylinder tightly in plastic wrap and refrigerate for at least 3 hours, preferably overnight, to firm up the dough.
  9. Prepare for baking: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  10. Slice and bake: Cut the chilled dough into ¼ inch thick disks and arrange them on the baking sheet with about 1 inch spacing. Bake for 11 minutes or until cookie edges begin to turn golden but the cookies remain light-colored.
