  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Green Sauce:

  • 1 cup fresh cilantro leaves
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 whole jalapeño chiles (roughly chopped)
  • 2 cloves garlic
  • 1 Tablespoon olive oil
  • 1 Tablespoon fresh lemon or lime juice
  • Kosher salt and freshly ground black pepper

Rice:

  • 1 cup jasmine rice
  • 1 tbsp butter or oil
  • ¼ cup onion (diced)
  • 23 garlic cloves (minced)
  • 1 tsp turmeric
  • 1/4 tsp EACH cumin, onion powder, salt, pepper
  • 2 cups chicken stock
  • 1 cup frozen peas

Instructions

  1. Marinate chicken: In a medium bowl, combine all the ingredients for the chicken marinade. Coat the chicken with the mixture and refrigerate for at least 1 hour.
  2. Grill or Bake Chicken: Grill or bake the chicken until fully cooked, brushing with reserved marinade halfway through.
  3. Prepare Rice: Rinse and soak rice, then sauté shallot and garlic. Add rice, seasoning, and chicken stock. Cook until rice is tender, then stir in peas.
  4. Make Green Sauce: Blend all green sauce ingredients until creamy. Season with salt and pepper.
  5. Serve: Plate rice, top with chicken, and drizzle with green sauce.
