Cheesecake Batter

  • 3 packages (8 ounces each) cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1 tablespoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 drop peppermint flavoring (for red batter)
  • Red food coloring gel, about 5 or 6 drops

Instructions

  1. Prepare the Oreo Base: Crush the package of Mini Oreo cookies finely and evenly distribute the cookie crumbs at the bottom of each parfait glass. Set aside to form a firm base layer.
  2. Mix Cream Cheese and Cream: In the bowl of a stand mixer, add the softened cream cheese and heavy whipping cream. Begin mixing on low speed to combine the ingredients gently.
  3. Whip Until Fluffy: Increase the mixer speed to high and whip the mixture for about 1 minute, until it becomes creamy and fluffy in texture.
  4. Scrape Sides and Remix: Stop the mixer and scrape down the sides of the bowl with a spatula to incorporate all the ingredients evenly, then blend again briefly.
  5. Add Vanilla Extract: Add the vanilla extract to the mixture and mix until fully integrated.
  6. Incorporate Sugars and Lemon Juice: Add the granulated sugar and lemon juice, mixing until the mixture is smooth and well combined.
  7. Add Powdered Sugar: Gradually add the powdered sugar, mixing on low speed to avoid dust clouds, then scrape down the bowl sides and mix until fully combined and smooth.
  8. Divide Batter: Remove half of the cheesecake batter into a separate bowl, so you have two equal portions for coloring.
  9. Flavor and Color Red Batter: To the batter remaining in the stand mixer bowl, add one drop of peppermint flavoring and red food coloring gel. Mix thoroughly until no white streaks remain and the batter is uniformly red.
  10. Prepare Plastic Wrap: Lay out a piece of plastic wrap approximately 10 to 12 inches wide on a clean counter surface.
  11. Layer Batters on Plastic Wrap: Place the white cheesecake batter in a long ribbon on one side of the plastic wrap, and next to it place the red cheesecake batter in a parallel ribbon.
  12. Roll Batters Together: Carefully roll the plastic wrap around the batters, pressing gently as you roll, then fold up the ends to contain the batter mixture inside, creating a marbled log.
  13. Prepare Piping Bag: Cut off one end of the plastic wrap log carefully to create an opening, then insert the wrapped batter into a pastry bag fitted with a piping tip to enable neat swirling while dispensing.
  14. Pipe Batter into Glasses: Pipe the swirled cheesecake batter over the Oreo cookie crumbs in each parfait glass. Use a swirling motion to create a pointed top on each parfait.
  15. Add Garnishes: Place a peppermint stick on the side of each parfait glass and sprinkle the top of the cheesecake batter with colored sprinkles for a festive touch.
  16. Finish Decoration: Add a snowman face decoration (optional) on the opposite side of the glass from the peppermint stick as shown in the recipe photo for extra charm.
