Pecan Graham Cracker Crust:
- 1/2 cup pecans, pulsed into crumbs
- 2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 8 tablespoons butter, melted
Cheesecake:
- (3) 8-ounce bricks of cream cheese, very soft
- 3/4 cup full-fat sour cream
- 1/2 cup dark brown sugar, packed
- 2/3 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 2 teaspoons pure vanilla extract
- 3 large eggs + 2 egg yolks, at room temperature
- 1 tablespoon bourbon (optional)
- 2 tablespoons all-purpose flour
Pecan Pie Topping:
- 6 tablespoons unsalted butter
- 2/3 cup dark brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/3 cup heavy cream
- 1/4 teaspoon salt
- 2 cups pecans, whole or chopped
- 1 teaspoon vanilla extract
- 1 tablespoon bourbon (optional)
- For the Pecan Graham Cracker Crust: Preheat oven and prepare pan. Process pecans, mix with other crust ingredients, press into pan, and bake.
- For the Cheesecake: Beat cream cheese and sour cream, add sugars and flavorings, mix in eggs, fold in bourbon and flour, pour over crust, bake in water bath, and chill.
- For the Pecan Pie Topping: Melt butter, add sugar and spices, stir in cream, mix in pecans, cool slightly, then spread over chilled cheesecake.
