Pecan Graham Cracker Crust:

  • 1/2 cup pecans, pulsed into crumbs
  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 tablespoons butter, melted

Cheesecake:

  • (3) 8-ounce bricks of cream cheese, very soft
  • 3/4 cup full-fat sour cream
  • 1/2 cup dark brown sugar, packed
  • 2/3 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons pure vanilla extract
  • 3 large eggs + 2 egg yolks, at room temperature
  • 1 tablespoon bourbon (optional)
  • 2 tablespoons all-purpose flour

Pecan Pie Topping:

  • 6 tablespoons unsalted butter
  • 2/3 cup dark brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup heavy cream
  • 1/4 teaspoon salt
  • 2 cups pecans, whole or chopped
  • 1 teaspoon vanilla extract
  • 1 tablespoon bourbon (optional)

Instructions

  1. For the Pecan Graham Cracker Crust: Preheat oven and prepare pan. Process pecans, mix with other crust ingredients, press into pan, and bake.
  2. For the Cheesecake: Beat cream cheese and sour cream, add sugars and flavorings, mix in eggs, fold in bourbon and flour, pour over crust, bake in water bath, and chill.
  3. For the Pecan Pie Topping: Melt butter, add sugar and spices, stir in cream, mix in pecans, cool slightly, then spread over chilled cheesecake.

Notes

  • Make sure all ingredients are at room temperature for the cheesecake filling.
