Yogurt Mixture

  • 1 cup thick yogurt (Greek or coconut yogurt work best)
  • 1/4 cup powdered peanut butter (can also substitute peanut butter or vanilla flavored protein powder)
  • 3 tbsp peanut butter
  • 34 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • Generous pinch of sea salt

Dates

  • Dates, pitted and ripped in half (or chopped for folding into mixture)

Chocolate Topping

  • 1 cup chopped chocolate or chocolate chips
  • 1 tsp coconut oil
  • Chopped peanuts, for topping (optional)

Instructions

  1. Prepare Yogurt Mixture: In a large bowl, combine the yogurt, powdered peanut butter, peanut butter, maple syrup or honey, vanilla extract, and sea salt. Mix thoroughly until the mixture is completely smooth. Taste and adjust sweetness by adding extra maple syrup if desired.
  2. Prepare Dates: Pit the dates and rip each in half, then roll each half into a ball. Alternatively, chop the dates and fold them into the yogurt mixture if you prefer a distributed chewy texture rather than a center.
  3. Assemble Bites: Use a mini muffin tin and divide the yogurt mixture evenly, filling each cup about one-third full. Place one date ball in the center of each cup, gently pressing it down to embed it slightly in the yogurt mixture.
  4. Melt Chocolate: In a small bowl, combine chopped chocolate and coconut oil. Heat in the microwave in 30-second intervals, stirring well between each interval, until the chocolate is melted and smooth. Spoon melted chocolate over each filled muffin cup, covering the yogurt mixture and date centers. Optionally, sprinkle chopped peanuts on top for added crunch.
  5. Freeze Until Firm: Place the muffin tin in the freezer for 2-3 hours, allowing the bites to fully set and firm up. Once solid, remove from the molds, optionally sprinkle with sea salt, and store in an airtight container in the freezer until ready to enjoy.
