Dough:
- 1/4 oz active dry yeast
- 1 tsp granulated sugar
- 1/4 cup warm water (about 115F)
- 4 cups all-purpose flour, plus more for rolling
- 1/2 cup granulated sugar
- 3/4 tsp kosher salt
- 6 tbsp unsalted butter, melted
- 1 cup whole milk, room temperature
- 1 large egg plus 1 egg yolk, room temperature
- 6 drops peach concentrate
Glaze:
- 2 cups powdered sugar, sifted
- 2 tbsp reserved peach filling
- 3 tbsp milk
- 1 tsp vanilla extract
- 1/2 tsp fresh lemon juice
- Peach Filling: Take 5 cups of thawed peaches and cut into small ¼-inch pieces. Cut remaining 1 cup into larger ½-inch pieces. Cook smaller peaches with sugar, cinnamon, nutmeg, salt, and lemon juice until thickened. Stir in cornstarch slurry and cool. Reserve some for glaze and topping.
