Streusel:

  • 1/4 cup all-purpose flour
  • 2 tbsp light brown sugar
  • 2 tbsp granulated sugar
  • 1/4 tsp ground cinnamon
  • 2 tbsp unsalted butter, cold, cut into small cubes

Dough:

  • 1/4 oz active dry yeast
  • 1 tsp granulated sugar
  • 1/4 cup warm water (about 115F)
  • 4 cups all-purpose flour, plus more for rolling
  • 1/2 cup granulated sugar
  • 3/4 tsp kosher salt
  • 6 tbsp unsalted butter, melted
  • 1 cup whole milk, room temperature
  • 1 large egg plus 1 egg yolk, room temperature
  • 6 drops peach concentrate

Glaze:

  • 2 cups powdered sugar, sifted
  • 2 tbsp reserved peach filling
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • 1/2 tsp fresh lemon juice

Instructions

  1. Peach Filling: Take 5 cups of thawed peaches and cut into small ¼-inch pieces. Cut remaining 1 cup into larger ½-inch pieces. Cook smaller peaches with sugar, cinnamon, nutmeg, salt, and lemon juice until thickened. Stir in cornstarch slurry and cool. Reserve some for glaze and topping.
  2. Brown Sugar Filling: Mix brown sugar, cinnamon, nutmeg, salt, and peach concentrate.
  3. Streusel: Combine flour, sugars, cinnamon, and butter into pea-sized pieces. Freeze.
  4. Dough: Activate yeast, then mix with flour, sugar, salt, milk, butter, eggs, and peach concentrate. Let rise.
  5. Assembly: Roll out dough, spread butter, peach filling, brown sugar filling, and peach pieces. Roll dough, cut into rolls, let rise, then bake.
  6. Baking and Glazing: Sprinkle streusel on risen rolls. Bake until golden. Top with peach filling and glaze.
