Ingredients

Scale

For the Parmesan Cream

  • 1/4 cup crème fraîche
  • 1/4 cup freshly grated Parmesan cheese, plus more for garnish
  • Pinch of kosher salt
  • Freshly ground black pepper, to taste

For the Prosciutto and Chips

  • 4 ounces (1/2 package) prosciutto
  • 2 (5-ounce) bags of salt and pepper potato chips
  • 1 large lemon, zested

Instructions

  1. Prepare the Parmesan Cream:

In a small bowl, combine the crème fraîche and 1/4 cup grated Parmesan cheese. Season the mixture with a pinch of kosher salt and freshly ground black pepper to taste. Mix until smooth and set aside.

  2. Cook the Prosciutto:

Heat a large skillet over medium-high heat. Place the whole prosciutto slices in the skillet in batches, cooking each side for about 2 minutes until browned and crispy. Transfer the cooked prosciutto slices to a paper towel-lined plate to drain any excess fat, then break into bite-sized pieces.

  3. Assemble the Chip Tower:

On a serving platter or large plate, start by layering a quarter of the salt and pepper potato chips evenly. Add a layer of crispy prosciutto pieces, then spread some of the Parmesan cream on top. Sprinkle freshly grated Parmesan over the cream. Repeat this layering process with chips, prosciutto, Parmesan cream, and Parmesan cheese until all ingredients are used.

  4. Garnish and Serve:

Finish by garnishing the top of the chip tower with a generous amount of freshly grated Parmesan cheese, lemon zest from the large lemon, and a sprinkle of freshly ground black pepper. Serve immediately to maintain the crispness of the chips and prosciutto.

Notes

  • Use fresh lemon zest for a bright and zesty finish that complements the richness of the Parmesan and prosciutto.
  • Cook prosciutto in batches to ensure even crisping and prevent overcrowding in the pan.
  • Serve immediately after assembling to keep the chips crispy and the prosciutto crunchy.
  • For a milder flavor, substitute crème fraîche with sour cream or Greek yogurt.
  • Can be prepared shortly before serving but avoid layering too early to prevent sogginess.
