Ingredients

Scale

Dry Ingredients

  • 1 cup oats (quick cooking or old fashioned)
  • 1/4 cup flax meal
  • 1/2 cup M&M’s
  • 1/4 cup peanuts, chopped

Wet Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Combine Ingredients: In a large bowl, mix all of the ingredients together until well blended. Make sure the peanut butter and honey are evenly incorporated with the dry ingredients.
  2. Form the Balls: Using about 2 tablespoons of the oat mixture, roll it into a ball with your hands. Place each ball on a lined baking sheet. Repeat with the remaining mixture to form all the energy bites.
  3. Chill: Place the baking sheet with the energy bites in the refrigerator for 20 minutes or until firm and set.
  4. Store: Once firm, transfer the energy bites to an airtight container. Store in the refrigerator for up to one week for the best freshness.

Notes

  • You can substitute M&M’s with chocolate chips or dried fruit for a different flavor profile.
  • If the mixture is too sticky to roll, chill it for 10 minutes before forming the balls.
  • Use natural peanut butter without added sugars for a healthier option.
  • These energy bites can be frozen for up to 3 months; thaw before eating.
