Cookies:

  • 2 cups (283g) all-purpose flour ((scoop and level to measure*))
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg, (plus more for topping)
  • 1/2 tsp ground cinnamon
  • 3/4 cup (170g) unsalted butter, (at room temperature)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light-brown sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract
  • 1/2 cup eggnog ((not low fat))

Frosting:

  • 1/2 cup (113g) butter, (at room temperature (I used 1/4 cup salted and 1/4 cup unsalted butter))
  • 35 Tbsp eggnog
  • 1/2 tsp rum extract
  • 3 cups (360g) powdered sugar

Instructions

  1. Preheat Oven: Preheat oven to 350°F (180°C). In a mixing bowl, whisk together flour, baking powder, salt, nutmeg, and cinnamon. Set aside.
  2. Mix Butter and Sugars: In the bowl of a stand mixer, cream together butter, granulated sugar, and brown sugar until pale and fluffy.
  3. Add Eggs and Flavorings: Mix in egg yolks one at a time, then add vanilla extract, rum extract, and eggnog. Slowly add in dry ingredients until just combined.
  4. Bake: Drop dough onto baking sheets and bake for 11-13 minutes. Let cool before frosting.
  5. Make Frosting: Cream butter until fluffy, then mix in rum extract, eggnog, and powdered sugar until smooth.

Notes

  • You can sprinkle some extra nutmeg on top for a more pronounced flavor.
  • Ensure the butter is at room temperature for best results.
