Carrots
- 1 lb. carrots, washed & peeled
Glaze
- 2 Tbsp maple syrup, divided
- 1 Tbsp whole grain mustard, divided
- 2 tsp Dijon mustard, divided
- 1 Tbsp olive oil
- 2 garlic cloves, minced
- ½ tsp dried thyme
- ¼ tsp salt
- Cracked black pepper, to taste
Garnish
- Fresh thyme sprigs, for serving
- Goat cheese, crumbled
- Preheat the oven. Set your oven to 425°F (220°C) and line a baking pan with parchment paper to ensure easy cleanup and prevent sticking.
- Prep the carrots. Rinse and pat the carrots dry. Peel them and trim both ends. Slice the carrots on the bias into approximately 1½ inch pieces. For larger pieces, halve them lengthwise so they roast evenly. Place the carrot pieces into a large mixing bowl.
- Make the glaze and toss. In a small bowl, whisk together 1 tablespoon maple syrup, ½ tablespoon whole grain mustard, 1 teaspoon Dijon mustard, and olive oil. Pour this mixture over the carrots. Add minced garlic, dried thyme, salt, and cracked black pepper. Toss thoroughly until all carrot pieces are well coated with the glaze and seasonings.
- Roast the carrots. Using a slotted spoon, transfer the carrots to the prepared baking pan in a single even layer, leaving the excess glaze in the bowl. Roast in the oven for 20 to 25 minutes until tender, longer if your carrots are larger (up to 30 minutes).
- Baste during roasting. About 5 to 10 minutes before the end of roasting, brush the reserved glaze from the bowl over the carrots to intensify the flavor and help caramelize them.
- Finish and serve. Whisk together the remaining 1 tablespoon maple syrup, ½ tablespoon whole grain mustard, and 1 teaspoon Dijon mustard. Drizzle this freshly mixed glaze over the roasted carrots, toss gently to coat, and transfer to a serving dish. Garnish with fresh thyme sprigs and crumbled goat cheese. Serve warm.
Notes
- For a vegan option, omit goat cheese or substitute with a plant-based cheese alternative.
- Adjust the amount of mustard and maple syrup according to your taste preference for sweetness and tanginess.
- Use carrots of uniform size for even roasting.
- The glaze can be prepared ahead and refrigerated for up to 2 days.
- For extra flavor, try adding a sprinkle of smoked paprika or a dash of cayenne pepper.
