Cookies:
- 1 cup (226 g) unsalted butter, melted and cooled
- 2½ cups (300 g) all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (150 g) light brown sugar
- ½ cup (100 g) granulated sugar
- ¼ cup (49 ml) maple syrup
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 teaspoon (5 ml) vanilla extract
- 1 teaspoon maple extract
Spiced Sugar Coating:
- ¼ cup (50 g) granulated sugar
- 1½ teaspoons ground cinnamon
Maple Glaze:
- 1 cup (120 g) powdered sugar, sifted
- 3 – 4 tablespoons (45 – 60 ml) maple syrup
- 1 – 2 tablespoons (15 – 30 ml) melted butter
- Melt: In a small bowl, melt the butter and cool in the fridge for about 15 minutes.
- Whisk: In another bowl, whisk together the flour, baking powder, baking soda, cornstarch, and salt until well combined.
- Combine Wet Ingredients: In a large mixing bowl, whisk in the melted butter, light brown sugar, and granulated sugar. Add the egg, egg yolk, maple syrup, vanilla extract, and maple extract. Stir until smooth.
- Add Dry Ingredients: Gradually add the dry ingredients to the wet mixture until just combined.
- Preheat and Rest Dough: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Let the dough rest while the oven preheats.
- Coat and Bake: Roll dough into spiced sugar, place on baking sheet, and bake for 9-11 minutes. Cool on a rack.
- Make Glaze: Whisk melted butter, maple syrup, and powdered sugar until smooth. Drizzle over cooled cookies.
