Tzatziki

Cauliflower Rice
- 1 Tbsp. extra-virgin olive oil
- 12 oz. frozen cauliflower rice
- 1 clove garlic, finely chopped
- 1/2 tsp. kosher salt
- 1 tsp. finely grated lemon zest
Turkey & Assembly
- 1 Tbsp. extra-virgin olive oil
- 1/2 yellow onion, chopped
- 1 lb. ground turkey
- 2 cloves garlic, finely chopped
- 1 tsp. dried oregano
- 1 tsp. smoked paprika
- 3/4 tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
- Peperoncini, for serving
- Tzatziki: In a medium bowl, combine the grated cucumber, finely chopped garlic, Greek yogurt, chopped fresh mint, and kosher salt. Toss everything until well mixed. Let the tzatziki sit at room temperature until ready to serve to allow the flavors to meld.
- Cucumber Salad: In a large bowl, toss together the sliced cucumbers, finely chopped yellow onion, quartered cherry tomatoes, extra-virgin olive oil, and kosher salt. Mix until evenly combined. Let the salad sit at room temperature until ready to assemble to develop its flavors.
- Cauliflower Rice – Step 1: Heat 1 tablespoon of extra-virgin olive oil in a large skillet over medium heat. Add the frozen cauliflower rice, spreading it in an even layer. Cover the pan and let it cook undisturbed for 8 minutes to allow steaming and softening.
- Cauliflower Rice – Step 2: Uncover the skillet, stir in the chopped garlic and kosher salt. Continue cooking while stirring frequently until some pieces of cauliflower start to brown and the garlic is fragrant, about 2 more minutes.
- Cauliflower Rice – Step 3: Transfer the cooked cauliflower rice to a large bowl. Stir in the finely grated lemon zest. Cover the bowl to keep the rice warm until assembly.
- Turkey & Assembly – Step 1: In the same skillet over medium-high heat, heat 1 tablespoon of extra-virgin olive oil. Add the chopped yellow onion and cook, stirring occasionally, until the onions soften and turn translucent, about 5 minutes. Add the ground turkey, chopped garlic, dried oregano, smoked paprika, kosher salt, and freshly ground black pepper. Cook, breaking up the turkey into smaller pieces and stirring occasionally, until the turkey is no longer pink and any liquid has evaporated, about 6 to 8 minutes.
- Turkey & Assembly – Step 2: Divide the warm cauliflower rice, cooked turkey, and cucumber salad evenly among serving bowls. Top each bowl with a generous dollop of the prepared tzatziki sauce. Serve with peperoncini on the side for added heat and flavor.
