Ground Beef Mixture:

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning)

Casserole Layers:

  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes (drained)
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup green onions, chopped
  • 1/2 cup bell pepper, diced
  • 1 tablespoon olive oil
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish with olive oil or cooking spray.
  2. Cook Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 2-3 minutes. Add the ground beef and cook until browned. Drain excess fat if needed.
  3. Add Seasoning: Stir in the taco seasoning and water. Let the mixture simmer for 2-3 minutes until fully combined.
  4. Layer Casserole: Spread the cooked beef mixture evenly in the bottom of the prepared baking dish.
  5. Add Sour Cream and Veggies: Spoon sour cream over the beef layer and top with diced tomatoes, bell peppers, black olives, and green onions.
  6. Top with Cheese: Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  7. Bake: Bake for 15-20 minutes or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven, sprinkle with fresh cilantro, and serve hot.
