Bolillo Rolls:

  • 4 bolillo rolls

Loaded Chicken Filling:

  • 1 rotisserie chicken
  • 1 small can green chiles
  • 1 small can pickled jalapeños
  • 1 large tomato, diced
  • 1 cup shredded pepper jack cheese (more if desired)
  • 1 bunch cilantro, chopped
  • ½ white onion, diced
  • ½ head iceberg lettuce, finely shredded
  • ¼ cup mayonnaise
  • Taco or Fajita seasoning, to taste
  • Avocado oil for the griddle

Instructions

  1. Pull the Rotisserie Chicken: Remove all meat and skin from the rotisserie chicken, then shred into bite-sized pieces.
  2. Prepare the Chicken Filling: Preheat a griddle to medium heat. Drizzle avocado oil and cook shredded chicken, chiles, and jalapeños with taco seasoning for 5 minutes. Add diced tomato and cheese, cook until cheese is melted and crispy in parts.
  3. Toast the Bolillo Rolls: Spread mayo on both sides of bolillo rolls. Toast on the griddle for 2 minutes each side.
  4. Assemble the Torta: Place cooked chicken on the bottom half of the bread, add lettuce, cilantro, and onions. Top with the other bread half and cut in half to serve.
