Waffle Dough
- 1 cup whole milk
- 3 ½ cups all-purpose flour
- 1 packet instant yeast (about 2 ¼ teaspoons)
- 3 tablespoons granulated sugar
- 10 tablespoons unsalted butter, melted
- 2 large eggs, room temperature
- ¾ teaspoon salt
Add-in
- 1 ½ cups sugar pearls (Belgian pearl sugar)
- Activate Yeast: Heat the whole milk in the microwave for about 15 seconds until lukewarm (approximately 100-110°F). Stir in the packet of instant yeast and let it sit for 2-3 minutes until dissolved and foamy.
- Make the Dough: In a large mixing bowl, combine the all-purpose flour, granulated sugar, melted butter, eggs, salt, and the yeast-milk mixture. Mix thoroughly until you create a smooth and cohesive dough. Cover and let it rise in a warm spot until doubled in size, approximately 30 minutes.
- Prepare Waffle Iron: Once the dough has risen, grease your waffle iron with a little butter or oil and preheat it until hot and ready to use.
- Add Pearl Sugar and Shape Dough: Gently fold the pearl sugar into the risen dough, ensuring the sugar is evenly distributed. Divide the dough into portions weighing about 4 ounces each and shape them into balls. Slightly flatten the balls into patties to fit your waffle iron.
- Cook Waffles: Place each dough patty in the preheated waffle iron and cook for 3-4 minutes until the waffles are deep golden brown and caramelized on the outside. Remove carefully and serve warm.
Notes
- Use Belgian pearl sugar for authentic caramelization; regular sugar will not yield the same texture.
- Do not overfill the waffle iron as the dough expands during cooking.
- If you don’t have a microwave, gently warm the milk on the stovetop to lukewarm temperature (about 100-110°F).
- Allow the waffles to cool slightly before eating; the sugar inside will be very hot when fresh off the iron.
- These waffles are best enjoyed fresh but can be reheated in a toaster or oven for crispiness.
