For Lavender Sugar:

  • 3 ¼ cups granulated sugar
  • 2 TBSP culinary dried lavender

For Crust:

  • 1 cup unsalted butter, melted and slightly cooled
  • 1/2 cup lavender sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups all-purpose flour

For Filling:

  • 8 large eggs
  • 1 ¼ cups fresh lemon juice
  • 2 3/4 cups lavender sugar
  • Zest of 2 lemons (about 2 TBSP)
  • 1/2 cup all-purpose flour

Additional:

  • Powdered sugar (for serving)

Instructions

  1. To Make the Lavender Sugar: Place dried lavender and 1 cup granulated sugar in a food processor. Blend until finely ground. Add remaining sugar and pulse to mix.
  2. To Make the Crust: Preheat oven to 350°F. Line a 9×13 pan with foil and spray with cooking spray. Mix butter, lavender sugar, vanilla, salt, and flour. Press into pan and bake for 25-30 minutes.
  3. To Make the Filling: Whisk eggs, lemon juice, lavender sugar, lemon zest. Sift in flour and mix. Pour over baked crust and bake at 325°F for 25-30 minutes.
  4. Once cooled, cut into bars, sprinkle with powdered sugar, and garnish with lavender buds.
