Strawberry Puree
- 1 lb fresh strawberries (16 oz. container), washed, stemmed, sliced, and roughly chopped
- 1/3 cup sugar (raw turbinado, brown, or white granulated)
Milk
- 32 oz whole milk (preferably Hiland Dairy Whole Milk or any high-quality whole milk)
- Ice cubes (optional, for serving)
- Prepare Strawberries: Begin by washing and drying the fresh strawberries carefully. Remove the stems, slice them, and then roughly chop to prepare for cooking.
- Cook Strawberry Puree: Place a skillet on medium heat and add the chopped strawberries along with the sugar. Stir and cook the mixture down until it thickens and becomes syrupy, with softened strawberry chunks remaining, about 8-10 minutes.
- Chill the Puree: Remove the skillet from heat and transfer the strawberry syrup and chunks into an airtight storage container. Seal it properly and refrigerate for at least two hours to let the flavors meld and cool completely.
- Assemble the Drink: When ready to serve, spoon some of the chilled strawberry puree into a glass. Use the back of the spoon to swirl the puree along the inside of the glass to create a beautiful ripple effect. Add ice cubes if desired.
- Add Milk and Serve: Pour whole milk gently over the strawberry puree in the glass. Serve immediately and enjoy the creamy, fruity refreshment of Korean Strawberry Milk.
