Potatoes
- 1 ½ pounds baby red potatoes
- ¼ cup (½ stick / 57 g) unsalted butter, (melted)
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
Toppings
- 2 medium jalapeno peppers, (seeded, finely diced)
- 6 slices bacon, (cooked, crumbled)
- 1 cup (113 g) sharp cheddar cheese, (shredded)
- Additional salt, to taste
Dip
- 1 cup (230 g) sour cream
- 1 tablespoon dry ranch seasoning mix
- 1 teaspoon jalapeno powder
- Potatoes – Preheat oven to 425°F and line a baking sheet with parchment paper. Boil potatoes until fork-tender. Smash potatoes, season, and bake for 40 minutes.
- Top potatoes with toppings – Add jalapenos, bacon, and cheese. Bake until cheese melts.
- Dip – Mix sour cream, ranch seasoning, and jalapeno powder. Serve with potatoes.
