This Jalapeno Popper Cucumber Salad offers a refreshing twist on the classic flavors of jalapeno poppers in a lighter, salad form. Creamy, crunchy, and with a hint of spice, it’s a perfect side dish or light meal.

Ingredients

Cucumbers:

  • 2 Persian cucumbers

Vegetables:

  • ½ red onion
  • 1 jalapeno

Dressing:

  • 34 tbsp cream cheese (preferably with herbs)
  • 1 tbsp Greek yogurt (or sour cream)
  • ½ tsp garlic powder
  • ⅓ tsp smoked paprika
  • ¼ tsp coarse sea salt
  • 34 tbsp sharp cheddar cheese
  • ¼ tsp soy sauce (regular or light (optional))

Garnish:

  • Sesame seeds (black & white)

Instructions

  1. Slice the Cucumbers: Slice the cucumber without peeling it with a mandolin or by a sharp knife on a cutting board into ½ cm (¼”) thick slices.
  2. Prepare Vegetables: Dice the red onions and jalapenos and add them on top of the cucumbers.
  3. Make Dressing: Add cream cheese, Greek yogurt, garlic powder, smoked paprika, flaky sea salt, cheddar cheese, and soy sauce to the bowl.
  4. Toss Everything: Mix everything well until the creamy dressing coats everything evenly.
  5. Serve: Transfer the salad onto a serving plate and sprinkle with sesame seeds before enjoying cold!

Notes

  • You can adjust the spice level by adding more or less jalapeno.
  • For a milder flavor, remove the seeds from the jalapeno before dicing.
  • Experiment with different types of cheese for varied flavors.
