Ingredients

Scale

Feta Filling

  • 8 oz Feta Cheese (Can substitute with goat cheese or ricotta.)
  • 2 tbsp Fresh Dill (Use fresh for best flavor.)
  • 2 tbsp Fresh Mint (Basil can be a substitute.)
  • 1 tbsp Lemon Zest (Use zest from unwaxed lemons.)
  • Freshly ground black pepper to taste

Phyllo Rolls

  • 8 sheets Phyllo Pastry (Keep covered with a damp cloth to prevent drying out.)
  • 4 tbsp Olive Oil (Brush between layers and on tops.)

Chili Honey Drizzle

  • 1/2 cup Honey (Use high-quality honey.)
  • 1 tbsp Chili Flakes (Adjust according to desired spice level.)
  • 1 tsp Lemon Juice (Freshly squeezed)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Feta Mixture: In a mixing bowl, crumble the feta cheese and add chopped fresh dill, mint, lemon zest, and freshly ground black pepper. Mix thoroughly until all ingredients are fully combined to create a flavorful filling.
  3. Prepare the Phyllo Strips: Lay two sheets of phyllo pastry on a clean surface and brush them lightly with olive oil. Cut the layered phyllo into strips, ensuring even sizes for uniform rolls. Keep remaining phyllo covered with a damp cloth to prevent drying out.
  4. Assemble the Rolls: Place approximately one tablespoon of the feta mixture at one end of each phyllo strip. Fold in the edges neatly, then roll the strip tightly around the filling to form a compact roll.
  5. Brush and Bake: Place the rolls on the prepared baking sheet. Brush the tops generously with olive oil. Bake in the preheated oven for 18-20 minutes or until the rolls are golden brown and crispy.
  6. Make the Chili Honey: While the rolls bake, combine the honey, chili flakes, and fresh lemon juice in a small saucepan over low heat. Warm gently, stirring occasionally, until combined and aromatic. Do not boil.
  7. Serve: Remove the rolls from the oven and allow them to cool slightly. Drizzle the warm chili honey over the rolls just before serving for a sweet and spicy finish.

Notes

  • Substitute feta with goat cheese or ricotta for different flavor profiles.
  • Use fresh herbs for vibrant taste, but dried herbs can be used in a pinch (reduce quantity by half).
  • Be careful not to burn the chili honey; keep heat low when warming.
  • Phyllo dough dries quickly, so keep it covered with a damp cloth while working.
  • Adjust chili flakes to control the spice level of the honey drizzle.
  • These rolls can be served warm or at room temperature.
