Instructions

Adjust baking time depending on the form of pistachios: slivered require less time, while blanched or whole pistachios might need a few minutes more. Remove from the oven and let them cool slightly.
  2. Initial Processing: Transfer the toasted pistachios to the bowl of a food processor or blender. Process until the pistachios break down into a fine powder. If using a blender, use the tamper to continuously move the nuts for even processing.
  3. Blend to Creamy Consistency: Continue blending or processing for 5 to 10 minutes. Scrape down the sides of the bowl regularly to ensure all nuts are evenly processed. Add the optional teaspoon of pistachio oil to help achieve a smoother, creamier butter.
  4. Season and Finalize: Once you reach the desired creamy texture, add a pinch of fine sea salt if desired. Pulse a few more times to thoroughly combine the salt with the pistachio butter.
