Wet Ingredients:
- 1/2 cup Sour Cream (or Yogurt)
- 1/2 cup Milk
- 1 large Egg
- 2 tbsp Butter (melted)
Dry Ingredients:
- 1.5 cups All-purpose flour
- 2 tsp Baking powder
- 1/2 tsp Cinnamon powder
- 3 tbsp Sugar (adjust to taste)
- 1 tsp Salt (adjust to taste)
Additional Ingredients:
- 3 medium Peaches (chopped, reserve any juice)
- 500 ml Oil (for frying)
- 1/2 cup Confectioner’s Sugar
- 1 tbsp Milk
- 1 tsp Vanilla Extract (or reserved peach juice)
- Step 1 – Heat oil for frying – Heat oil in a heavy-bottomed pan over medium heat.
- Step 2 – Mix the wet ingredients – In a large bowl, combine sour cream, milk, egg, and melted butter. Whisk until smooth.
- Step 3 – Add dry ingredients and mix – Incorporate flour, baking powder, cinnamon powder, sugar, and salt into the wet mixture. Mix until just combined.
- Step 4 – Fold in the peaches and fry – Gently fold in chopped peaches. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides.
