Ingredients

Scale

Dry Ingredients

  • 2 cups (250g) all-purpose flour, plus more for kneading and rolling
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon finely chopped fresh rosemary or other add-in

Wet Ingredients

  • 2/3 cup (160g/ml) water
  • 3 tablespoons (41g/45ml) extra-virgin olive oil, plus more for brushing on top

Topping

  • Flaky sea salt, for sprinkling on top

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, salt, onion powder, garlic powder, and finely chopped fresh rosemary or your preferred add-in until evenly combined.
  2. Add Wet Ingredients: Pour in the water and extra-virgin olive oil, then stir with a wooden spoon or silicone spatula until a dough clump forms.
  3. Knead the Dough: Transfer the dough onto a lightly floured surface. Lightly flour your hands and knead the dough for 1 to 2 minutes, adding small amounts of flour as needed to prevent sticking, until you can form a rough ball.
  4. Rest the Dough: Return the dough ball to the bowl, cover it with plastic wrap, and let it rest for at least 10 minutes or up to 1 hour at room temperature to relax the gluten.
  5. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 425°F (218°C) and line large baking sheets with parchment paper to prevent sticking.
  6. Divide Dough: Cut the rested dough in half, keeping one half covered while working with the other.
  7. Roll Dough: On a lightly floured surface, roll one half of the dough out into a thin rectangle approximately 1/16 inch (1.5mm) thick. If the dough shrinks back, cover and rest for 5 minutes before trying again.
  8. Cut Crackers: Using a ruler and a pizza cutter, slice the dough into small rectangles about 3 x 1.5 inches in size. Carefully transfer them to the prepared baking sheet.
  9. Repeat Rolling and Cutting: Repeat the rolling and cutting process with the second half of the dough.
  10. Dock and Season: Poke holes in each cracker several times with a fork to prevent bubbling. Brush the tops with olive oil and sprinkle flaky sea salt or other desired toppings like everything bagel seasoning or sesame seeds.
  11. Bake: Place the baking sheets in the oven and bake for 9 to 12 minutes until the crackers turn golden brown and crispy. Rotate sheets halfway through baking for even browning.
  12. Cool: Allow the crackers to cool completely on the baking sheets placed on a cooling rack; this cooling step ensures optimal crispness.
  13. Store or Serve: Store crackers in an airtight container at room temperature for up to 2 days. To re-crisp, bake at 350°F (176°C) for 10 minutes and cool completely before serving.

Notes

  • Substitute rosemary with other fresh herbs like thyme, oregano, or basil for different flavors.
  • For a seed variation, sprinkle sesame seeds, poppy seeds, or everything bagel seasoning on top before baking.
  • If the dough shrinks back when rolling, allow it to rest covered for a few minutes to relax the gluten.
  • These crackers pair exceptionally well with hummus, crab dip, assorted cheeses, or cranberry pecan cheese balls.
  • Store crackers properly to maintain their crispness, and reheat to freshen if they soften.
