Main Ingredients
- 1 cup raw carrots, shredded
- 10 medjool dates, pitted
- 1/2 cup raw pecans
- 1/2 cup raw walnuts
- 1/2 cup rolled oats
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- Sprinkle of sea salt
Optional Ingredients
- Shredded coconut (for rolling)
- Plain Greek yogurt (for serving)
- Creamy peanut butter (for serving)
- Prepare Carrots: Wash and peel 1-2 medium carrots depending on size. Roughly chop the carrots and place them into a food processor to shred finely. Transfer the shredded carrots to a large mixing bowl and set aside.
- Process Dates and Nuts: Halve the Medjool dates and remove the pits. In the food processor, combine the dates, raw pecans, raw walnuts, ground cinnamon, ground ginger, and a sprinkle of sea salt. Pulse until the nuts are finely chopped and well combined with the dates.
- Mix Ingredients: Add the processed nut and date mixture into the bowl with the shredded carrots. Stir in the rolled oats and chia seeds. Combine all ingredients thoroughly with a spoon. If the mixture feels too dry and crumbly to form balls, add a few tablespoons of water gradually until it sticks together well.
- Form Balls: Using a spoon, scoop approximately one tablespoon of mixture and roll it between your palms to form balls about the size of a ping-pong ball. If desired, roll each ball in shredded coconut for extra texture and flavor.
- Chill: Arrange the energy bites on a baking sheet, spacing them apart to prevent sticking. Place the sheet in the freezer for at least 30 minutes to firm up. You can store the bites in the freezer for extended freshness.
- Serve: Enjoy the carrot cake energy bites as a wholesome snack. Optionally, serve with a dollop of plain Greek yogurt and creamy peanut butter for added creaminess and protein.
Notes
- For best texture, ensure dates are soft. If they are dry, soak them in warm water for 10 minutes and drain before using.
- You can substitute nuts based on preference or availability, such as almonds or cashews.
- Store energy bites in an airtight container in the freezer for up to 2 weeks.
- These bites are naturally vegan; to keep them vegan, omit Greek yogurt or substitute with a plant-based yogurt.
- Add a pinch of nutmeg or cloves for a more intense carrot cake flavor variation.
