Healthy Buster Bars are a delicious and nutritious treat that you can easily make at home. These bars are packed with protein and flavor, making them the perfect guilt-free indulgence.

Filling:

  • 3/4 cup vanilla Greek yogurt
  • 1/4 cup peanut butter
  • 1 teaspoon maple syrup
  • 2 Tablespoons vanilla protein powder
  • 2 Tablespoons lightly chopped peanuts
  • 1 Tablespoon chocolate chips (optional)

Coating:

  • 1 cup dark chocolate chips
  • 1 Tablespoon coconut oil
  • pinch of flaky sea salt (optional)

Instructions

  1. Mix Filling: Mix the yogurt, peanut butter, maple syrup, and protein powder in a mixing bowl until smooth.
  2. Scoop Onto Baking Sheet: Scoop 5-6 large dollops of the mixture onto a baking sheet lined with parchment paper and flatten them into a round shape.
  3. Add Toppings: Top each one with chopped peanuts and chocolate chips (optional).
  4. Freeze: Press a popsicle stick into each one and freeze for at least 30 minutes (but can be frozen overnight).
  5. Melt Chocolate: Melt the chocolate chips and coconut oil together in the microwave, mixing every 30 seconds for about 1 – 1.5 minutes.
  6. Coat Bars In Chocolate: Dip each bar into the chocolate and use a spoon to coat evenly.
  7. Add Flaky Salt: Place each bar back onto the baking sheet and top with a sprinkle of flaky salt (optional).
  8. Freeze & Enjoy: Freeze for another 15 minutes, then enjoy!

  • You can customize these bars by adding your favorite nuts or dried fruits to the filling.
