Halloumi and Hot Honey Glaze

  • 1 tablespoon extra virgin olive oil
  • 8.8 oz sliced Halloumi cheese, ¼-inch thick
  • 2 tablespoons honey
  • 1 teaspoon Mexican-style hot sauce
  • 1 tablespoon fresh lime juice

Wrap Assembly

  • 4 (10 to 12-inch) flour wraps
  • Vegetable toppings: sliced avocado (remaining ¾ avocado), cucumber, tomatoes, lettuce, etc.

Instructions

  1. Make Cilantro Yogurt Sauce: Add ¾ cup plain Greek yogurt, ¼ avocado, ½ cup fresh cilantro, 1 small clove garlic, ½ to 1 jalapeno pepper (cored and chopped), and ½ teaspoon fine sea salt to a food processor or blender. Blend until the mixture is smooth and creamy. Set aside for assembly.
  2. Sear Halloumi: Heat 1 tablespoon extra virgin olive oil in a large nonstick skillet over medium heat. Arrange 8.8 oz of sliced halloumi cheese in a single layer. Cook the cheese for about 2 minutes on each side until golden brown and crispy on the outside.
  3. Prepare Hot Honey Glaze: While the halloumi sears, in a small bowl, mix together 2 tablespoons honey and 1 teaspoon Mexican-style hot sauce. Once the halloumi is golden, reduce the skillet heat to low and drizzle the hot honey mixture over the cheese. Toss gently to coat all slices and cook for 1 to 2 minutes until the honey starts to bubble and glaze the cheese.
  4. Finish Halloumi: Stir in 1 tablespoon fresh lime juice into the skillet with the glazed halloumi. Toss to evenly coat both sides of the cheese slices, then remove the skillet from heat to prevent burning.
  5. Assemble Wraps: Lay out the 4 flour wraps on a flat surface. Spread a generous amount of the cilantro yogurt sauce on each wrap. Slice the remaining avocado and scatter the slices along with your preferred vegetable toppings such as cucumber, tomatoes, and lettuce on top of the sauce. Place the honey-glazed halloumi cheese over the vegetables. Drizzle additional cilantro yogurt sauce if desired, then roll each wrap tightly to enclose the fillings and serve immediately.
