Gluten Free Doughballs Recipe

Introduction

These gluten free doughballs are a simple and delicious snack or side, perfect for anyone avoiding gluten. With a cheesy, garlicky twist and a soft interior, they’re quick to make and sure to please.

A round wooden board holds a stack of golden brown cheese puffs, each topped with small green herb leaves, arranged in a loose pile at the center. To the left of the puffs are several slices of white herb butter with visible green specks, some spread lightly on an old-fashioned butter knife with a dark wooden handle. Above the board, a small white bowl of creamy yellow sauce sits next to a cheese knife with a similar dark wooden handle, all placed on a white marbled surface. Ingredients

  • 300 g self-raising gluten free flour (see notes if using plain gluten free flour)
  • 300 g natural yoghurt or Greek yoghurt
  • 75 g mature Cheddar cheese, grated
  • 1 tsp salt
  • 20 g melted butter
  • 1/2 tsp garlic paste

Instructions

  1. Step 1: Preheat the oven to 200°C (180°C fan)/Gas mark 6. Line a baking tray with baking paper and set aside.
  2. Step 2: In a large mixing bowl, combine the yoghurt, grated cheese, gluten free flour, and salt. Use a spoon or spatula to mix, then as the mixture thickens, use your hands to bring it together into a dough.
  3. Step 3: Divide the dough into pieces weighing about 50g each. Roll each piece into a ball and place them on the prepared baking tray, leaving a few millimeters of space between each.
  4. Step 4: Bake for 15–20 minutes until the doughballs are crisp and golden on top. Remove from the oven and mix the melted butter with the garlic paste. Brush this mixture over the hot doughballs or serve it on the side as a dip.

Tips & Variations

  • If you use plain gluten free flour, add 1 tsp baking powder to help the dough rise. For extra flavor, try adding chopped herbs like rosemary or chives into the dough.

Storage

Store any leftover doughballs in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 180°C for 5–7 minutes to restore their crispness. Avoid microwaving as it can make them soggy.

How to Serve

A woman's hand is dipping a light brown, round biscuit with a crispy outer texture and some green herbs on top into a small, white bowl full of creamy, pale yellow cheese sauce. Several similar biscuits are placed closely around the bowl on a round wooden board, all showing the same golden-baked tops dotted with herbs. The scene is set against a softly blurred white marbled texture background, highlighting the warm tones of the biscuits and the smooth cheese sauce. Photo taken with an iphone --ar 4:5 --v 7

  • 300 g natural yoghurt (or Greek yoghurt)
  • 75 g mature Cheddar cheese, grated
  • 1 tsp salt

Garlic Butter Glaze

  • 20 g melted butter
  • 1/2 tsp garlic paste

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (180°C fan) or Gas mark 6. Line a baking tray with baking paper and set aside to prepare for baking the doughballs.
  2. Mix Ingredients: In a large mixing bowl, combine the natural yoghurt, grated mature cheddar cheese, gluten-free self-raising flour, and salt. Use a spoon or spatula to mix the ingredients initially. As the mixture thickens, use your hands to knead and bring everything together into a cohesive dough.
  3. Shape Doughballs: Divide the dough into pieces weighing approximately 50 grams each. Roll each piece into a smooth ball and arrange them on the lined baking tray, leaving a few millimeters of space between each ball to allow for slight expansion.
  4. Bake Doughballs: Place the tray in the preheated oven and bake for 15 to 20 minutes, or until the doughballs are crisp and golden on top.
  5. Prepare Garlic Butter: While the doughballs bake, mix the melted butter and garlic paste together in a small bowl.
  6. Glaze and Serve: Once baked, remove the doughballs from the oven. While still hot, brush the garlic butter mixture over them for extra flavor, or serve the garlic butter on the side as a dipping sauce. Enjoy warm.

Notes

  • If using plain gluten-free flour instead of self-raising, add 1 tsp baking powder to help the dough rise.
  • Using Greek yoghurt instead of natural yoghurt will create a thicker dough and slightly different texture.
  • Adjust garlic paste amount to your taste preference or substitute with finely minced fresh garlic.
  • Best eaten fresh and warm on the day of baking for optimal texture and flavor.
  • Store any leftovers in an airtight container and reheat in oven for best results.
