4.9 from 61 reviews

These glazed stovetop carrots are a simple and delicious side dish featuring tender carrots caramelized in a honey and olive oil glaze. Perfectly cooked on the stovetop, they develop a beautiful golden color and a sweet-savory flavor, garnished with fresh parsley for a touch of brightness.

Ingredients

Scale

Carrots

  • 6 carrots, peeled, cut into quarters lengthwise then halved

Glaze and Seasoning

  • 3 tbsp olive oil
  • 2 tsp honey
  • 2/3 cup water
  • Salt and pepper to taste

Garnish

  • Parsley, finely chopped (optional)

Instructions

  1. Heat the oil: Warm 3 tablespoons of olive oil in a very large skillet over medium-high heat until shimmering and hot.
  2. Cook the carrots: Add the prepared carrots to the pan, positioning them so almost all are cut side down. Let them cook undisturbed for 5 to 7 minutes until they develop a golden-brown color on the cut sides.
  3. Add glaze ingredients: Pour in 2 teaspoons of honey, 2/3 cup of water, and season with salt and pepper. Stir once to combine, then allow to cook without stirring until the water evaporates and the carrots begin to caramelize, about 3 minutes.
  4. Caramelize the carrots: Stir the carrots once or twice during this stage to ensure even caramelization, allowing them to develop a lovely glaze coating.
  5. Serve: Transfer the glazed carrots to a serving dish, sprinkle with finely chopped parsley if desired, and serve warm.

Notes

  • For a deeper flavor, you can add a splash of balsamic vinegar during the glazing step.
  • If carrots vary in size, adjust cooking time to ensure even tenderness and caramelization.
  • Use fresh parsley for garnish to add a fresh herbal note and visual appeal.
  • Be careful not to stir the carrots too much while browning to achieve a good caramelized crust.
