Instructions

  1. Prepare the sauce: In a small bowl, combine the minced garlic, ¼ cup water, low-sodium soy sauce (or tamari), light brown sugar, toasted sesame oil, chili sauce (such as sambal oelek), and cornstarch. Whisk together until the mixture is smooth and well combined.
  2. Cook the vegetables: Heat the vegetable oil in a large skillet over medium-high heat until it shimmers. Add the thinly sliced red bell pepper, trimmed and cut asparagus pieces, and snow peas. Stir occasionally and cook the vegetables until they begin to soften, approximately 3 to 4 minutes.
  3. Add the shrimp: To the skillet with the vegetables, add the peeled and deveined shrimp. Continue cooking while stirring occasionally until the shrimp turns pink and opaque, about 3 to 4 minutes more.
  4. Incorporate the sauce: Pour the prepared sauce mixture into the skillet with the shrimp and vegetables. Cook, stirring occasionally, until the sauce thickens enough to coat the shrimp and vegetables nicely, which should take around 5 minutes.
