Ingredients

Scale

Pasta

  • 8 ounces linguine pasta
  • 1 tablespoon olive oil
  • ½ teaspoon salt (for pasta water)

Shrimp & Seasoning

  • 1 pound raw shrimp (peeled and deveined, frozen is fine)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Old Bay seasoning (optional, or substitute smoked paprika or cajun seasoning)
  • 1 clove garlic, minced

Sauce

  • 1 ½ tablespoons butter (divided)
  • ½ cup heavy cream (double cream in the UK)
  • ½ cup grated parmesan cheese
  • ¼ cup fresh parsley, chopped

Instructions

  1. Cook the Pasta: Bring a medium-sized pot of water to a boil, salting the water generously. Add the linguine and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta and set it aside.
  2. Cook the Shrimp: In a skillet over medium heat, melt 1 tablespoon of butter and add the olive oil. Add the shrimp and cook for about one minute. Season with salt, black pepper, and Old Bay seasoning or your spice of choice. Continue cooking until the shrimp turn pink and opaque, cooking in batches if needed to avoid overcooking. Remove shrimp from the skillet and set aside.
  3. Prepare the Sauce: In the same skillet, melt the remaining ½ tablespoon of butter. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and use a spatula to deglaze the pan, scraping up any bits from the bottom.
  4. Add Cheese and Adjust Sauce: Stir in the grated parmesan cheese and let it melt into the cream. Slowly add reserved pasta water a little at a time to loosen the sauce to your desired consistency. Let the sauce simmer gently for about a minute. Taste and adjust seasoning with additional salt and pepper if needed.
  5. Combine Pasta and Shrimp: Toss the drained linguine in the creamy sauce until fully coated. Then add the cooked shrimp back into the skillet to warm through gently. Mix everything together carefully.
  6. Garnish and Serve: Sprinkle the chopped fresh parsley over the pasta for a fresh finish. Serve the garlic shrimp pasta immediately while warm.

Notes

  • Using frozen shrimp is convenient—just thaw them thoroughly before cooking.
  • Old Bay seasoning adds a classic seafood flavor, but smoked paprika or cajun seasoning are great alternatives.
  • Reserve pasta water is key for adjusting sauce consistency and helping sauce stick to pasta.
  • Be careful not to overcook shrimp to keep them tender and juicy.
  • Fresh parsley adds a nice color contrast and fresh herbal note.
