Ingredients

Scale

Beef Marinade

  • 1.5 lbs skirt steak, cut against the grain into very thin strips
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon curry powder
  • Freshly cracked black pepper, to taste

Toppings

  • Fish sauce, to drizzle
  • Lime juice, to drizzle
  • Chili crisp, for topping
  • Fresh cilantro, chopped

Accompaniments

  • Rice, for serving
  • Broccoli, bagged salad, or quick cucumber salad (see notes)
  • Wooden or metal skewers, soaked if wooden (minimum 15 minutes)

Instructions

  1. Prep: Soak the wooden skewers in water for at least 15 minutes to prevent burning during cooking. Simultaneously, cut the skirt steak against the grain into very thin strips for tender skewers.
  2. Marinate the Beef: In a bowl, combine the beef strips with soy sauce, garlic paste, ginger paste, kosher salt, granulated sugar, curry powder, and freshly cracked black pepper. Mix well to coat. If possible, let the beef marinate for 30-45 minutes to deepen the flavors; if short on time, 5-10 minutes will still yield delicious results.
  3. Skewer the Beef: Thread the marinated beef strips onto the soaked skewers, scrunching the meat closely together. Arrange the skewers on a parchment-lined baking sheet and sprinkle additional freshly cracked black pepper on top.
  4. Broil the Skewers: Position an oven rack approximately 4-6 inches below the broiler element and preheat the broiler on high for a few minutes. Place the prepared skewers under the broiler and cook for about 6 minutes, achieving a caramelized and slightly charred surface.
  5. Serve: Remove the skewers from the oven and allow them to rest for a few minutes. Brush the tops with any pan juices, then drizzle with lime juice and fish sauce. Garnish with chopped cilantro and chili crisp. Serve hot alongside rice and a fresh vegetable side like cucumber salad or steamed broccoli. Enjoy immediately for the best flavor and texture.

Notes

  • For wooden skewers, soaking for at least 15 minutes avoids burning while broiling.
  • Alternative cooking methods include grilling or pan-frying if a broiler is unavailable.
  • The quick cucumber salad is a refreshing accompaniment to balance the savory, spicy skewers.
  • Marinating time can be flexible; the longer, the more flavorful, but even a short marination enhances taste.
  • These skewers can be enjoyed plain, drizzled with sauce, or served over rice for a complete meal.
