Wild Rice

  • 1 cup long-grain wild rice
  • Kosher salt

Salad Ingredients

  • 2 navel oranges (zest removed from one of the oranges)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons Vanilla & Date Balsamic Vinegar
  • 1/2 cup seedless green grapes (cut in half)
  • 1/2 cup walnuts (toasted)
  • 1/2 cup diced dried apricots
  • 2 tablespoons scallions (white and green parts, chopped)
  • 1/2 teaspoon freshly ground black pepper
  • 1 head of butter lettuce

Instructions

  1. Cook the Wild Rice: Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt. Bring to a boil, then simmer uncovered for 50 to 60 minutes until very tender. Drain well and let steam in the pot for 10 minutes. Transfer the rice to a mixing bowl.
  2. Prepare the Salad: Peel the oranges, removing the pith, and cut them into bite-sized pieces. Add to the bowl with the rice. Mix in orange zest, olive oil, orange juice, balsamic vinegar, grapes, walnuts, apricots, scallions, salt, and pepper. Stir well to combine.
  3. Let Flavors Blend: Allow the salad to sit for 30 minutes to meld the flavors. Adjust seasonings if needed and serve at room temperature.
