Wild Rice
- 1 cup long-grain wild rice
- Kosher salt
Salad Ingredients
- 2 navel oranges (zest removed from one of the oranges)
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons Vanilla & Date Balsamic Vinegar
- 1/2 cup seedless green grapes (cut in half)
- 1/2 cup walnuts (toasted)
- 1/2 cup diced dried apricots
- 2 tablespoons scallions (white and green parts, chopped)
- 1/2 teaspoon freshly ground black pepper
- 1 head of butter lettuce
- Cook the Wild Rice: Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt. Bring to a boil, then simmer uncovered for 50 to 60 minutes until very tender. Drain well and let steam in the pot for 10 minutes. Transfer the rice to a mixing bowl.
- Prepare the Salad: Peel the oranges, removing the pith, and cut them into bite-sized pieces. Add to the bowl with the rice. Mix in orange zest, olive oil, orange juice, balsamic vinegar, grapes, walnuts, apricots, scallions, salt, and pepper. Stir well to combine.
- Let Flavors Blend: Allow the salad to sit for 30 minutes to meld the flavors. Adjust seasonings if needed and serve at room temperature.
