Dough:
- 3 1/2 cups bread flour (420 g), sifted and leveled*
- 2 tsp instant yeast
- 2 Tbsp sugar
- 1 tsp salt
- 1 1/3 cup fat-free Greek yogurt (333g), plain or unsweetened. Drain excess liquid before using
- 1/2 cup plus 2 Tbsp water, or milk of choice
Filling:
- 3 Tbsp brown sugar, or granulated monk fruit sweetener
- 1 Tbsp cinnamon powder
Glaze:
- 1 cup powdered sugar, or powdered monk fruit sweetener
- 2 Tbsp milk of choice
- Mix all the dry ingredients (bread flour, instant yeast, sugar, salt) in the bowl of the stand mixer.
- Add the Greek yogurt.
- Knead the dough at a low setting, adding water gradually until a soft dough forms.
- Knead for 8-10 minutes until the dough is smooth and elastic.
- Let the dough rise until doubled in size.
- Prepare the filling while the dough rises.
- Roll out the dough into a rectangle.
- Spread the filling mixture over the dough.
- Roll up the dough and cut into individual rolls.
- Place the rolls in a baking pan and let rise.
- Bake the rolls until golden brown.
- Prepare the glaze and drizzle over the cooled rolls.
