Dough:

  • 3 1/2 cups bread flour (420 g), sifted and leveled*
  • 2 tsp instant yeast
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 1/3 cup fat-free Greek yogurt (333g), plain or unsweetened. Drain excess liquid before using
  • 1/2 cup plus 2 Tbsp water, or milk of choice

Filling:

  • 3 Tbsp brown sugar, or granulated monk fruit sweetener
  • 1 Tbsp cinnamon powder

Glaze:

  • 1 cup powdered sugar, or powdered monk fruit sweetener
  • 2 Tbsp milk of choice

Instructions

  1. Mix all the dry ingredients (bread flour, instant yeast, sugar, salt) in the bowl of the stand mixer.
  2. Add the Greek yogurt.
  3. Knead the dough at a low setting, adding water gradually until a soft dough forms.
  4. Knead for 8-10 minutes until the dough is smooth and elastic.
  5. Let the dough rise until doubled in size.
  6. Prepare the filling while the dough rises.
  7. Roll out the dough into a rectangle.
  8. Spread the filling mixture over the dough.
  9. Roll up the dough and cut into individual rolls.
  10. Place the rolls in a baking pan and let rise.
  11. Bake the rolls until golden brown.
  12. Prepare the glaze and drizzle over the cooled rolls.

  • You can customize the filling with nuts or raisins for added flavor.
