  • ½ tsp kosher salt
  • ½ tsp ground pepper
  • 2 tbsp olive oil (divided)

For the Stir Fry:

  • 2 cloves garlic (minced)
  • 2 medium carrots (peeled and thinly sliced into 1/4″ coins)
  • ½ lb asparagus (ends trimmed, sliced into 2″ pieces)
  • 1 medium red bell pepper (thinly sliced)
  • 1 medium yellow bell pepper (thinly sliced)
  • 6 oz snow peas
  • 2 tbsp sesame seeds

For the Sauce:

  • ¼ c soy sauce (or coconut aminos, or tamari)
  • 2 tbsp rice vinegar
  • 2 tbsp fresh orange juice
  • 2 tbsp honey
  • 1 tbsp cornstarch (or arrowroot powder)
  • 2 tsp sesame oil

Instructions

  1. Prepare the Steak: Thinly slice the steak and season with salt and pepper. Freeze briefly for easier slicing.
  2. Make the Sauce: Combine all sauce ingredients in a bowl and set aside.
  3. Cook the Steak: Stir fry the steak until charred and medium rare, then set aside.
  4. Prepare the Vegetables: Sautee carrots, asparagus, bell peppers, and snow peas with garlic.
  5. Combine and Finish: Add the steak back to the skillet, pour in the sauce, and stir fry until thickened. Serve with sesame seeds.

Notes

  • For a spicier kick, add red pepper flakes or sriracha to the sauce.
  • Feel free to customize the vegetables based on personal preference or what’s in season.
  • Make it gluten-free by using tamari or coconut aminos instead of soy sauce.
