Chicken:

  • 1 and a half pounds boneless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil

Pineapple Sauce:

  • 1 can (20 oz.) sliced pineapple, save the juice for the sauce
  • 1 tablespoon cornstarch
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 garlic cloves, minced

Serving:

  • 4 servings of cooked rice

Instructions

  1. Season Chicken: Season chicken with thyme, salt, and pepper.
  2. Brown Chicken: Over medium heat, brown the chicken in the vegetable oil.
  3. Prepare Pineapple Sauce: Drain pineapple slices and reserve the juice. Combine cornstarch and 2 oz. of pineapple juice. In a separate bowl, mix the remaining juice with mustard, honey, and garlic.
  4. Cook Chicken: Add Dijon mixture to the pan, cover, and simmer for 15 minutes. Remove chicken from the pan.
  5. Thicken Sauce: Stir in cornstarch mixture, bring to a boil, and simmer for 2 minutes. Return chicken to the pan and coat with sauce.
  6. Add Pineapple: Place pineapple slices on and around the chicken, cover for 2-3 minutes to heat through.
  7. Serve: Serve over cooked rice.
