Instructions

  1. Prepare the Pancake Batter: In a large bowl, prepare your pancake batter according to the recipe or pancake mix instructions. Use about 2 cups of batter for this recipe.
  2. Separate Small Portion for Green Batter: Remove approximately one-fifth (around ⅖ cup) of the batter and place it into a small bowl for coloring with green food coloring.
  3. Color the Orange Batter: Add a very small amount of orange food coloring (or a mix of red and yellow) to the remaining larger portion of batter in the large bowl. Stir thoroughly and add more color in small increments until you achieve a bright orange hue.
  4. Color the Green Batter: Add green food coloring to the batter in the small bowl. Stir well to create a vibrant green shade.
  5. Prepare Green Batter Piping Bag: Transfer the green batter into a plastic sandwich bag or piping bag. Push batter down into one corner, then snip off the tip to create a small hole about ⅕ inch wide. When not piping, prop the cut end up to prevent spills.
  6. Preheat Skillet: Heat a large skillet over medium heat and spray with non-stick cooking spray to prevent sticking.
  7. Cook the Pumpkin Base: Using a cookie scoop or about ⅓ cup measuring cup, ladle orange pancake batter into the skillet forming a circle. Allow it to begin to set.
  8. Pipe the Pumpkin Stem: Pipe green batter onto the skillet, drawing a rectangle or square at the top of the orange circle to form the pumpkin’s stem. Fill in the shape completely, ensuring the green batter touches the orange so the stem sticks during cooking.
  9. Cook Until Set and Bubbly: Let the pancake cook until the sides look matte, not glossy, and bubbles appear on the top side. This indicates it is ready for the next step.
  10. Add the Jack-O-Lantern Face: Press nine chocolate chips carefully onto the orange circle to create facial features. Position the chips with the pointed ends facing the green stem, mimicking classic triangular pumpkin cutouts.
