Delicious gluten-free cruffins that are a hybrid of croissants and muffins. These sweet treats are perfect for breakfast or a snack, with layers of cinnamon sugar filling and a hint of vanilla.

Yeast Mixture:

  • 2 ½ teaspoons active dry yeast
  • 1 tablespoon cane sugar
  • 1 cup milk

Cruffins:

  • 3 cups gluten free flour blend
  • ½ cup cane sugar
  • 6 tablespoons unsalted butter (frozen)
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup cane sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter (melted)
  • ¼ cup cane sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Yeast Mixture – Warm 1 cup milk to 110º F, add 1 tablespoon cane sugar and 2 ½ teaspoons active dry yeast. Let sit for 5 minutes. Preheat oven to 200º F.
  2. Cruffins – Mix dry ingredients, grate frozen butter into flour, add yeast mixture and vanilla. Roll out dough, add sugar-cinnamon mix, cut into strips, roll, place in muffin pan. Let rise for 45 minutes. Bake at 375º F for 25-30 minutes. Roll in sugar-cinnamon mix.

Notes

  • You only get one good rise with gluten-free dough, so shape cruffins before rising.
