They are simple to make, naturally gluten-free, and can be easily adapted with different nut butters.

Ingredients

Scale

Greek Yogurt Mixture

  • 1 cup plain Greek yogurt
  • ¼ cup peanut butter (or nut butter of choice)
  • 2 Tbsp maple syrup
  • 2 tsp vanilla extract

Chocolate Coating

  • ¾ cup chocolate chips
  • 1 tsp avocado oil
  • Sea salt for sprinkling (optional)

Instructions

  1. Mix the Base: In a mixing bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir the ingredients together until the mixture is smooth and creamy.
  2. Freeze the Bites: Line a baking sheet with parchment paper. Using a 1 tablespoon cookie scoop or spoon, scoop portions of the yogurt mixture onto the baking sheet. Freeze the bites for about 4 hours, or until they are fully frozen and firm.
  3. Melt the Chocolate: Place the chocolate chips and avocado oil in a microwave-safe bowl. Heat in 30-second intervals, stirring well between each, until the chocolate is completely melted and smooth.
  4. Coat the Bites: Dip each frozen Greek yogurt bite into the melted chocolate, ensuring each piece is coated evenly. Place the coated bites back on the parchment paper. If desired, sprinkle a small pinch of flaky sea salt on top of each bite while the chocolate is still wet.
  5. Alternative Chocolate Application: If dipping is difficult, drizzle the melted chocolate over the frozen bites for a simpler, though less uniform, chocolate coating. Let the chocolate set before serving.

Notes

  • Use any nut butter of your choice for variety, such as almond or cashew butter.
  • For a sweeter bite, adjust maple syrup quantity to taste.
  • Store the bites in an airtight container in the freezer for up to 2 weeks.
  • To avoid melting while dipping, make sure the yogurt bites are thoroughly frozen.
  • Use dark chocolate chips for a richer flavor and less sugar.
  • If you have nut allergies, substitute peanut butter with seed butter like sunflower seed butter.
