  • 2 sticks (1 cup) salted butter, at room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup high-quality strawberry jam

Icing:

  • 2 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Strawberry Powder: Process the freeze-dried strawberries into a fine powder using a blender or food processor.
  2. Preheat and Prepare: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  3. Mix the Dough: In a large bowl, cream together butter, sugar, and vanilla. Add the egg and mix well. Stir in the flour, baking soda, 1/4 cup of the strawberry powder, salt, and strawberry jam.
  4. Bake the Cookies: Roll the dough into balls, place on the baking sheet, and bake for 8 minutes. Flatten the cookies slightly and bake for an additional 2-3 minutes. Let cool on the baking sheet.
  5. Prepare the Icing: Mix cream cheese, powdered sugar, hot milk, vanilla, and remaining strawberry powder. Adjust consistency with more milk if needed.
