Instructions

  1. Heat the oil: Pour about an inch of oil into a heavy-bottomed pan and place over medium heat until hot enough for frying.
  2. Prepare draining station: Line a small sheet pan or large plate with paper towels and set aside to absorb excess oil from the fritters.
  3. Mix dry ingredients: In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, salt, pepper, paprika, and garlic powder. Stir well to evenly distribute the seasonings.
  4. Add wet ingredients: Pour the cold milk and lemon juice into the dry mixture and stir until just combined to form the batter.
  5. Add onions: Fold the chopped onions and green onions into the batter, mixing quickly to incorporate evenly.
  6. Fry the fritters: Carefully spoon heaping tablespoons of batter into the hot oil, taking care not to overcrowd the pan. Fry for 3 to 4 minutes on one side until golden and crispy, then flip and fry for another 3 to 4 minutes until cooked through and golden brown.
  7. Drain and repeat: Remove the fritters with a slotted spoon and transfer to the paper towel-lined plate to drain excess oil. Continue frying the remaining batter in batches.
