Ingredients

Scale

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (from a jar of pickles)

Coating Mixture

  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 large eggs, whisked
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese

For Frying

  • Cooking oil, for frying (about 1/2 inch deep in pan)

Instructions

  1. Marinate Chicken: Place the chicken breasts in a shallow dish or a zip-top bag, then cover them with dill pickle juice. Refrigerate and let the chicken marinate for 30 minutes to 2 hours to absorb the tangy flavor.
  2. Prepare Coating Stations: Set up three shallow dishes. In the first, combine the flour with garlic powder, onion powder, paprika, salt, and pepper. Place the whisked eggs in the second dish. In the third, mix the seasoned breadcrumbs with grated Parmesan cheese.
  3. Coat Chicken: Remove the chicken breasts from the pickle juice and pat them dry with paper towels. Dredge each piece first in the seasoned flour, then dip into the whisked eggs, and finally press into the breadcrumb-Parmesan mixture until evenly coated.
  4. Heat Oil and Fry: In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat. Once hot, carefully fry the coated chicken breasts for 5 to 7 minutes per side, or until they develop a golden brown crust and reach an internal temperature of 165°F (75°C).
  5. Drain and Rest: Transfer the fried chicken to a wire rack to drain off excess oil. Let the chicken rest for a few minutes before serving to allow the juices to redistribute and the coating to set.

Notes

  • Marinating the chicken longer, up to 2 hours, will intensify the pickle flavor.
  • Maintain medium-high heat to ensure a crispy crust without burning.
  • You can use homemade or store-bought seasoned breadcrumbs.
  • Monitor the oil temperature to avoid greasy chicken; the oil should be hot but not smoking.
  • Serve with ranch dipping sauce or a fresh salad for a complete meal.
