  • Salt, to taste

Instructions

  1. Combine Ingredients: In a large mixing bowl or the bowl of a stand mixer, add the grated cheddar, cream cheese cubes, drained pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper, minced jalapeño (if using), and several twists of freshly ground black pepper. Mix the base components thoroughly.
  2. Mix Thoroughly: Using a hand mixer, stand mixer, or by hand with a sturdy wooden spoon or spatula, beat the mixture until all ingredients are well combined and the texture is smooth and creamy.
  3. Season to Taste: Taste your pimento cheese and adjust seasoning if needed. Add more black pepper, a pinch or two of salt, or an extra pinch of cayenne pepper if you prefer more heat. Blend again until flavors are evenly distributed.
  4. Serve or Chill: Transfer the mixture to a serving bowl. Serve immediately or cover and chill in the refrigerator for up to 1 week. Note that pimento cheese will firm up when chilled; let it sit at room temperature for about 30 minutes before serving to soften.
