Chicken:
- 2 large boneless, skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons butter, melted
- 1–2 tablespoons olive oil
Sauce:
- 10.5 oz. cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream, at room temperature
- ½ teaspoon onion powder
- 1 oz. packet Ranch seasoning mix
- Season/Sear the Chicken: Slice the chicken into thinner slices, pound if needed. Sprinkle with Italian seasoning, salt, and pepper. Brush with melted butter. Sear in a hot pan until golden brown. Set aside.
- Make the Sauce: In the same skillet, combine cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix. Let it reduce for 5 minutes. Add the chicken back to the skillet, spoon sauce over. Cover and simmer for 10 minutes.
- Optional: Serve with baked potatoes, spooning sauce over each potato.
