Creamy Polenta with Parmesan Cheese is a comforting and versatile dish that pairs well with a variety of meats, sauces, and vegetables. This recipe yields a rich and creamy polenta with a delicious cheesy flavor, perfect for a cozy meal.

Ingredients

Scale

For the Polenta:

  • 4 cups water
  • 1 cup milk
  • 1 ½ teaspoons kosher salt
  • 1 cup coarse or medium-grind cornmeal
  • 3 tablespoons butter
  • ½ cup grated Parmesan cheese, plus more for serving
  • 2 teaspoons chopped fresh rosemary or parsley (optional)

Instructions

  1. Bring the liquid to a boil: In a heavy-duty saucepan or small Dutch oven, bring the water and milk to a boil. Stir in the salt.
  2. Add the cornmeal: Gradually sprinkle the cornmeal into the pan while whisking continuously until all the cornmeal is incorporated and there are no lumps.
  3. Cook the polenta: Reduce the heat to a very low simmer, cover, and cook the polenta for 25-35 minutes, stirring every 10 minutes until thick and creamy.
  4. Finish the polenta: Remove from heat and stir in the butter, Parmesan cheese, and additional salt to taste.
  5. Serve: Serve the polenta warm, topped with chopped rosemary or parsley and extra Parmesan cheese.

Notes

  • For a richer flavor, you can use chicken or vegetable broth instead of water.
  • Adjust the consistency of the polenta by adding more liquid if needed.
